Instructions

  1. 1Combine sugar and water in a heavy pot.
  2. 2Add vinegar (prevents crystallization).
  3. 3Heat to 234°F (112°C) - soft ball stage. Use a candy thermometer.
  4. 4Remove from heat, let cool to 200°F (93°C) without stirring.
  5. 5Beat vigorously until mixture turns white and thickens.
  6. 6Pour into molds or onto parchment paper before it sets.
  7. 7Store wrapped in plastic. Place directly on top bars.
